Mommy Moments Link up

Katherine shares her heart for the Lord and for her family as she realizes how valuable life is and how so many (even pro-life) Christians are very much against life and having children. I have twin younger sisters.. & today's their Birthday!

 
Today I get to brag a bit.. I may have never mentioned this but I have the coolest two younger sisters ever!!

These two gems beside me turn twenty two today!! So today this blog is dedicated to them. 

We girls were born only fifteen months apart. And when we weren't pulling out each others hair we were the best of buds. We were homeschooled and raised on a farm so we did pretty much everything together! Our childhood was all about finding squirrels to keep as pets.. (Our parents didn't know about our desire to kidnap squirrels!)  Riding goats bigger then us, raising rabbits, and being best friends.

I was the older one who was boy crazy, wanted to get married and have lots of kids and Suzy and Sarah were all about animals, never wanted to marry and dedicate their lives to horse training and rescuing all 
animals..
 
Now we're  all grown up and chasing our dreams!! I married my best friend and now we are a growing family, and though Suzy and Sarah no longer want to be single for forever they are chasing their dreams all the same and even more so! They're go getters!
 
When they're not horse back riding, they're doing horse stunts, animal shows, writing, drawing, and so many other things.. They also do mermaid shows!! 
 
They're not just talented, fearless, and super exciting! They also have a servants heart and they love to bless others with the gifts they have!! (Like giving Evelynne free horse back riding lessons in the future!!) ;)
 
My little Evelynne loves her aunties and I know she'll forever look up to them and even brag about them to all of her buddies just as I'm doing now.

Pumpkin Muffins.


If you haven't noticed I have been a bit fall crazy here. I don't know if it's pregnancy or I've just really missed my fall but I've been slowly preparing for my favorite season since August by decorating the house and pinning many goodies.

And while many were out at the beach on Labor day I was gladly at home celebrating by fall obsession by making these goodies that I personally believe tastes even better then Starbucks or Panera bread! Everyone in my house LOVED them including my Little love and Big Love! Leon he hasn't stopped asking me for them since we ran out the day after I made them so I've made two batches already. Plus I love how simple they are to make with simple ingredients.

Are you ready to get your pumpkin on?

For one dozen you will need:
1 1/2 cups all-purpose flour. (I used WG white if you wanna take the healthier root. ;)
1 teaspoon baking powder
1 cup canned solid-pack pumpkin (from a 15-oz can)
1/3 cup vegetable oil
2 large eggs
1 teaspoon pumpkin pie spice
1 1/4  cups plus 1 tablespoon sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon.

Now lets get cookin'!
Put oven rack in middle position and preheat oven to 350 degrees.
Put liners in muffin cups or spray the cups. Whisk together flour and baking powder in a small bowl. Whisk together pumpkin, oil, eggs, pumpkin pie spice, 1 1/4 cups sugar, baking soda, and salt in a large bowl until smooth, then whisk in flour mixture until just combined.

Stir together cinnamon and remaining 1 tablespoon sugar in another bowl. Divide batter among muffin cups (each should be about 3/4 full), then sprinkle tops with cinnamon-sugar mixture. Bake until puffed and golden brown and a wooden pick or skewer inserted into center of a muffin comes out clean, 25 to 30 minutes. Cool in pan on a rack 5 minutes, then transfer muffins from pan to rack and cool to warm or room temperature.

Evelynne's 21 month Update.


Girl, I cannot even believe it. Just two more months and you will be a big two year old. There's so many things I want to remember about you which is one of many reasons why I'm so glad I journal and blog. Especially in this busy and tiring reason we're in I never want to forget why this age you're at in has to be one of my top favorites thus far.

You're starting to really figure out who you are. You're getting so much more independent, wanting to do more everything by yourself now and boy does the whole house know when you don't get what you want.. As frustrating as it is sometimes I love that independence in you. The kind of strong willed look on things that you know what you want and you won't stop until you get it. It tells me that you're going to go after whatever you're called to do with all of your heart and strength.
I know now without a doubt you're called to be a leader.. You like to be in charge and you like to know and choose what you're doing. I know you're going to be a great leader and people will follow you with respect and honor because they will see that Jesus leadership difference in you.

Always remember darling, that God has not given you the spirit of fear. But of power, love and a sound mind. Be at peace my darling and always remember that God is for you! And because of that who cares who's against you. I love you! Xoxo - Mama

Evelynne's 21 Month update.
Nicknames: Evie,  Little love,Sweet pea, munchkin, Princess, Little Bear. 

Evelynne Loves: Walks, Mr bear, Micky mouse, Harry the Bunny, talking, When everyone's home, and cars.
Favorite activities:Running, Dancing, pulling herself up on the monkey bars (With daddy's help) Swings, swimming, collecting rocks, painting and picking up fall leaves.
Evelynne doesn't like:Being told "no"//Timeouts//Getting her diaper changed. You know, the usual.

Favorite foods:
Green smoothies, peaches, oatmeal, cheddar cheese, Ice cream, fruit snacks, watermelon, peaches, chocolate & white milk
 
What you learned how to do this month:
Her new words this month are "More" "Cheese" "Ice" and "Up" a total of 15 words!! You're vocabulary is getting so much better and you are trying to pronounce so much now!
Her new signing word is "Milk"

You have also learned how to blow bubbles by yourself, Spit in the sing after you brush your teeth and we're working on cleaning up after yourself.

You have a great sense of direction. When we go for our walks you know exactly what houses all of your friends live at and where the beach is. 

You are now drinking out of a big girl cup. It's only at the table and that's where it will be for a few years but you love it and you feel so big and so proud of yourself.

My most favorite Oatmeal recipe (and possibly yours too!)

 Happy September!!!!  Can you believe that fall is pretty much here already?? Be a hater if you insist but I'm truly 100% excited that fall is coming upon us! Spring and Fall have and shall always be my favorite seasons of the year. So to kick off the crispy, cooler, leafy, pumpkin season I thought I would share my most favorite Fall breakfast with you!


I started making my own oatmeal when I finally got brave enough to look at the ingredients for Quakers Instant apple oatmeal. Full of wonderful natural and artificial flavors... (Blah!) You're pretty much eating sugar people. Any who,  With all the seasonal breads, cookies and muffins I was making last year I thought maybe I should at least make a healthy start to my day by adding this healthy/ delish  breakfast.


And if you're a mama to a picky eater have no fears. My Little girl has been so picky lately but has not yet said no to this.

Best oatmeal ever recipe. (Because I forgot the actual name!)

You will need:
  • 2 cups water
  • 2/3 cup oatmeal, not instant
  • 1 pear, peeled, cored and cubed
  • 1 apple,  peeled, cored and cubed
  • 1/3 cup dried cherries, chopped.
  • 1/4 cup golden raisins, chopped.
  • 2 Tbs brown sugar
  • 1/4 tsp pure vanilla extract
  • 1/2 tsp cinnamon
To do:
In a pot bring the water to a boil and add the rest of the ingredients listed. Simmer on medium low for 10 to 15 minutes or until the pears and apples are tender.
You can either serve now or puree in a food processor or blender for younger babies.  Add more water if needed.

If making this strictly for baby you will have plenty of left over. Pour into an ice-cube tray. Cover with plastic wrap or ice-cube tray cover. Place in freezer and when frozen remove from trays. Store in freezer bags. Each cube is 1 ounce. Will store in freezer for 3 months or in the refrigerator for 3 days.

On a side note: This video has made me laugh constantly every time! I honestly have no idea how I'm gonna handle my girl going to school for the first time in a few years who knows, I may homeschool. :) Moms what did you do on your kids first day back to school?
